Seizo Mitani
After honing his skills through training at renowned establishments, he pursued his own theory and sensibility. In 2010, he founded “Tonkatsu Narikura” in Tokyo, establishing an innovative dish that overturns conventional expectations and presenting a new value for tonkatsu.
Through slow, low-temperature cooking, he achieves a beautifully delicate coating and tender meat finished with a subtle pink hue. This approach draws out the maximum umami of the ingredients, captivating gourmets and earning high acclaim both in Japan and abroad.
