Hiroyuki Iwata honed his skills at 「Mendokoro Honda」, one of the most renowned ramen restaurants in the industry, where he eventually became the head of the restaurant due to his exceptional talent.
In 2019, he opened Shinjiko Shijimi Chuka Soba Kohaku in Ota City, Tokyo. His signature ramen, is a bowl of blissful bliss, made with a generous amount of shijimi without using any chemical seasonings to bring out the full richness of flavor.
This bowl of pure bliss has earned high praise both in Japan and internationally.
