At the age of 25, transitioned from a high-altitude worker to the food and beverage industry. After working at an okonomiyaki restaurant, he joined a yakitori restaurant. Subsequently, he moved to a chicken meat wholesale company to deepen his knowledge of chicken.
In September 2011, he opened "Torisawa." Later, "Torisawa 22" was opened in Nishi-Azabu. The restaurant was featured consecutively in the Michelin Guide Tokyo for five years, establishing itself as one of Japan's top restaurants known for its difficulty in securing reservations.
Furthermore, last year, he launched a new venture, "Torisawa Jigborn Club," a new business model. His attitude of continuous challenge not only contributed to the success of "Torisawa" but also positions him as a leader in Japan's yakitori industry.
